Hong Kong Style Egg Tarts


Egg Tarts were a real treat growing up, my family would order a plate of these at yum cha and we’d also buy them from a Chinese bakery once in a while. Egg tarts are a variation of the English Custard Tart, minus the spice. The buttery pastry combined with the delicate custard makes it a moreish brekkie/arvo tea/dessert/supper/snack! And in my opinion, the Cantonese version tastes better than the original ๐Ÿ˜›

I never imagined that I’d be able to make egg tarts at home, so I felt a huge sense of achievement when I successfully made a batch of these with my aunt a few weeks ago!


There are two types of egg tarts, either puff or shortcrust pastry. In this case, I made shortcrust pastry.


Hong Kong Style Egg Tarts ็‰›ๆฒน็šฎ่›‹ๆ’ป

Ingredients for the Shortcrust Pastry (made using a Thermomix):

  • 200g plain flour
  • 100g butter, roughly chopped
  • 30g caster sugar (made in Thermomix)
  • 1 egg

Ingredients for the Egg Filling:

  • 70g caster sugar (made in Thermomix)
  • 100ml milk
  • 100ml hot water
  • 3 eggs, whisked


  1. Pastry cases Add 100g raw sugar into TM Bowl, mill 10 Seconds, Speed 9 to make caster sugar. Remove sugar from TM Bowl
  2. Add 200g flour, 100g butter, 30g caster sugar and blend 10 Seconds, Speed 6, mixture should resemble breadcrumbs
  3. Add 1 egg through hole in mixing bowl lid and knead 30 seconds using the Knead function
  4. Transfer the dough onto a lightly floured pastry mat and roll it into a ball then let it chill in the fridge for 15 minutes
  5. Egg Filling Dissolve 70g caster sugar in 100ml hot water, let this syrup cool down before adding 100ml milk and 3 whisked eggs
  6. Strain the egg filling through a sieve to get rid of bubbles
  7. Roll out the pastry, shape it into individual tart tins/muffin tray
  8. Pour egg filling into the pastry cases
  9. Bake in oven at 160*C for 20 minutes
  10. Enjoy your homemade egg tarts! They are best served fresh from the oven ๐Ÿ˜‰
